Recipe of the day: Spicy tropical grilled-prawn salad
A spicy tropical salad.
Ingredients
Spicy marinade:
1 Tbsp (15ml) chilli powder
2 Tbsp (30ml) smoked paprika
1 Tbsp (15ml) chilli flakes
¼ cup (60ml) olive oil
Juice (45ml) of 1 lime
½ pack (350g) prawns, defrosted, heads removed and deveined
Salt and milled pepper
1 pack (150g) Asian salad mix
½ pineapple, cut into chunks
½ punnet (125g) cherry tomatoes, halved
2 spring onions, sliced
1 avocado, sliced, for serving
¼ cup (60ml) PnP Crafted Collection lime, ginger & sesame salad dressing
Method
Place all marinade ingredients in a bowl and mix well to combine.
Toss prawns in marinade and season.
Heat a griddle pan over medium-high heat and grill prawns for 1–2 minutes per side, or until fully cooked through.
Set aside to cool slightly.
Place salad leaves, pineapple, tomatoes and onions in a serving bowl and toss to combine
Top with grilled prawns and sliced avocado.
Drizzle with salad dressing and serve immediately.
